Our Story..
Quentin Paillard, Flavien Nowack, Adrien Renoir, Bertrand Lapie and Antoine Bouvet are the founders of the Cidrerie de Verzy.
We are crafting something special (high quality cider), following the principles of winemaking rather than traditional cider methods.
We are sourcing organic and biodynamic apples and pears from 30- to 250-year-old trees, both grown locally in Champagne as well as in Normandy.
Fermentations in oak last for up to a year in our cellar in Verzy followed by the 2nd fermentation in bottle using natural sugar from apples and pear rather than sugar. Finally, cider is kept on lees for at least 12 months before release.
It is also and above all a project of friends who have decided to share their experience and know-how to humbly create a unique and captivating cider.
